Can’t say I’m not missing all the perks of being in the @bbcgoodfood  office (I see you with those fancy mushies @barney_desmazery  @lulugrimes  @annalawsoneats ) but doing my best with the supermarket staples. Roasting tin panzanella, one of the most delicious and easy dinners made from scraps from the veg drawer and bread bin. Roasted a chicken with peppers, tomatoes, red onions, loads of skin on garlic cloves, rosemary, balsamic & oil. Crisp up half a loaf of sourdough torn into chunks then throw into the tray when the chicken is resting along with olives & basil. Smush it all together a bit and leave for 10 mins or so to let the bread soak up all the lovely chickeny juices. On a mission to use up every scrap in the fridge. This aubergine has been shrivelling in the bottom of the veg drawer for over a week but slow roasted with harissa is was just 👌🏻 served with spiced, roasted chickpeas & brown rice (for the little one too) and topped with feta, mint, coriander and harissa spiked hummus for me #dinnertonight

Previously vegan banana bread (until toasted and smothered in salty butter) still going strong after 5 days in the tin. Toasting banana bread gives it a lovely chewy edge and if it’s studded with choc, like this one, you’ll get some gorgeous molten pockets. I developed this recipe when breastfeeding my first child who suffers with a #dairyallergy  /#cmpa  and it’s been a favourite ever since.
